Keto Christmas Glazed Ham Recipe | Sweet Glazed Ham with Keto Bread Rolls for the Ketogenic Diet

This week on Simons Christmas Keto Kitchen we are make Keto Christmas Glazed Ham. This is my own recipe I created to emulate the ham we had growing up.

Method

Glaze

  • 1 cup Erythritol Gold
  • 1 Tablespoon Fibre Syrup
  • 1/2 cup Golden Milled Flax meal
  • 1 Dessert Spoon Mustard
  • 1 Glass of Port
  • 1 Glass of Brandy
  • 1 Teaspoon of Xanthan Gum

Mix all ingredients in a bowl and allow to stand.

 

Ham

  • 1 unsmoked Gammon Joint
  • Cloves

Place in a pan of water and bring to the boil briefly, cool with cold water, this removes some of the excess salt. Place in a roasting dish, using a knife pierce all over and place cloves into the holes, cover loosely with foil. Cook in the oven at 170-180 degrees C until cooked. Remove the skin and cloves and cover with the glaze, return to the oven until the glaze caramelises 30-40 minutes.

 

Bread Rolls

To serve I’ve made some great bread rolls from the Mad Creation Hub website.

Method

Place 1 sachet of yeast in a cup with 1 teaspoon of sugar or inulin, add half a cup of warm water and allow to stand for 30-40 minutes for the yeast to activate.

 

Add the yeast mix to a mixing bowl along with:

  • 1 large egg
  • 1 pinch of salt
  • 1/4 cup of Golden Flax meal
  • 1/4 cup Almond meal
  • 1/3 cup Oat Fiber
  • 3/4 cup vital wheat gluten
  • 42g butter cubed
  • 1/2 teaspoon xanthan gum

Mix on low speed with dough hooks for 5 minutes, then work with hand and divide into 6. Place on greaseproof paper on a baking tray and put in a warm place for an hour to double in size. Add some sesame seed to the top and bake in an oven at 170 degrees C for 30-35 minutes.
