Vegetarian Keto Cheese & Onion Loaf Recipe with Shelled Hemp Seeds

This moist cheese and onion loaf is perfect for a vegetarian ketogenic diet however don’t let the vegetarians keep it to themselves its delicious and ideal anyone on keto. Serve it cold in your lunchbox with a salad. We are using shelled hemp seeds as the main ingredient which is a fantastic ingredient for keto with 52g of quality fat (omega 3,6 & 9) per 100g, 32g protein per 100g and only 1g carbohydrate per 100g.

Ingredients

  • 1 1/2 cups shelled hemp seeds
  • 1 1/2 cups of boiling water
  • 130g strong cheddar cheese
  • 1 onion chopped
  • A squirt of lemon juice
  • 1 teaspoon of psyllium husk
  • 1/2 to 1 teaspoon of cayenne depending how spicy you like it
  • Dessert spoon of dried parsley
  • Salt and pepper
  • 1 egg
  • 3 tablespoons of double cream 

Method

Put the hemp seeds in a pan with the water put on a lid and simmer for 10 minutes. Remove the lid at the end and reduce until the liquid is gone.

Take off the heat and add the cheese, onion, lemon juice, psyllium husk, cayenne, parsley and salt & pepper and mix.

Beat the egg in a separate bowl with the cream. Add this to the pan and mix in.

Pour the mixture into a loaf tin lined with greaseproof paper and place in an oven at 190 degrees C for about 45 minutes until golden brown.

Remove from the oven and allow the loaf to cool before turning out onto a plate and peeling back the greaseproof paper.
