Keto Christmas Stollen Bites Recipe | Low Carb Spiced Fruit Bread with Marzipan

Today we have three recipes for the price of one, an easy Keto Bread, a Keto fruit bread and a Keto Christmas Stollen that’s perfect to help you celebrate Christmas while sticking to your keto diet.

The Recipe

Eggs

Separate 6 eggs we just want the 6 whites for the stollen and 1-2 of the yolks for the marzipan, I’d suggest making Keto Battenberg cake, custard, ice cream or egg custard with the left overs.

Marzipan

  • 125g ground almonds
  • 60g powdered sweetener
  • 60g granular sweetener
  • 1-2 egg yolks

Mix together until it forms a ball, add an extra egg yolk if it doesn’t come together. Work with hands into a ball. Roll out to a sheet to fit your baking tray. Chill.

Prep the Peel

Peel the pith from a small orange and a lemon, cut up squirt with sugar free golden syrup and heat in the microwave for a minute to soften and release the essence.

Other ingredients

  • 3tbsp golden linseed
  • 2 tbsp ground almonds
  • 1 tbsp coconut flour
  • 75g sweetener
  • Pinch of salt
  • 1 tsp baking powder
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 2 tsp mixed spices
  • 1 tsp psyllium husk
  • 100g frozen berries
  • 6 egg whites

Whisk everything except the berries and peel. Fold in the berries and peel. Pour half the mix into a lined tin, add the marzipan and cover with the other half of the mix. Cook for 45-60 minutes at 190C. Turn out and dust with powdered sweetener, cut into squares, pour yourself a Christmas drink and enjoy. Merry Christmas!
