Keto Salted Caramel Ice Cream Bars | A Keto Fat Bomb Recipe

This Salted Caramel Ice Cream Bar Recipe is a perfect fat bomb for a low carb diet, reminiscent of a snickers ice cream bar.

 

Ingredients

  • 1/2 pack of butter
  • 250g Sugar Free Skinny Syrup Golden Syrup
  • 1/2-1 teaspoon Salt to taste
  • 1-3 Tablespoons Brown Erythritol
  • 300ml Double Cream
  • 100g Salted Mixed Nuts

Method

Melt butter in a milk pan with the syrup. Add the salt and Erythritol to taste. Allow to simmer for 5-10 minutes until it darkens slightly. Slowly stir in the double and simmer for another 5 minutes until it begins to thicken. In a silicone muffin / bar tray add the nuts now pour the liquid over nuts. Allow to cool to room temperature and then freeze for 2-3 hours. Notes Note in the video I used 1 tablespoon of Erythritol, you can add 1-3 tablespoons depending on how sweet you like it. Also I like it quite salty, you can add between 1/4 and 1 teaspoonful depending how you like it. I’d suggest, tasting it once the butter has melted and adjusting the sweetness and saltiness to your own tastes.
